Acid adjustment notes

Acidity changes affect more than a number on a lab sheet. They can change flavour, stability, colour, microbial risk, and the timing of cold stabilization.

Use the calculator to size a bench trial first. If the trial tastes worse even though the TA looks better, the arithmetic has done its job by preventing a full-batch mistake.

Why bench trials matter

A wine can have the same TA after two different treatments and still taste different. Tartaric acid, potassium bicarbonate, calcium carbonate, potassium bitartrate precipitation, pH movement, and cold stability can all change the practical result.

For production work, make small labelled samples, let them settle where appropriate, and retest before scaling the addition.

FAQ

Is this the same as pH adjustment?

No. TA and pH are related but not interchangeable. A treatment can move one more than the other.

Why are carbonate additions not 1:1?

Potassium bicarbonate and calcium carbonate are converted using acid-neutralizing equivalents, not direct flavour equivalence.
