Before changing alcohol or volume

Dilution and fortification calculations are mass-balance estimates. They can tell you how much a water or spirit addition changes volume and ABV, but they do not model flavour, acidity, sugar, mouthfeel, legal category, or stability.

Use the output for bench trials before changing a batch. A mathematically correct adjustment can still make a wine taste thin, hot, sweet, or unbalanced. Record the trial volume and addition carefully so you can scale only the version that actually works in the glass.

Check the wine, not just the percentage

Alcohol adjustment changes more than a label number. Dilution can lower body, acidity, tannin, and flavour intensity, while fortification can change sweetness perception and stability. Use this result to understand scale before making bench trials.

For a real cellar trial, scale the result down to a glass or small measuring cylinder first. That makes it easier to taste whether the alcohol target improves the wine or simply moves a spreadsheet number. If the trial tastes thinner, hotter, or less balanced, the arithmetic may be right but the winemaking decision may still be wrong.
